These burgers are quick and easy and are the perfect substitute for real hamburger patties!
In a large bowl, mash the black beans with a fork (you could puree them, but I prefer that thicker texture that comes from just mashing them by hand). Add in the rice, egg, and 2 tablespoons of salsa. Mix well until blended.
Scoop by 1/4 cupfuls and place in a skillet sprayed with non-stick cooking spray. Flatten with a spatula to make a 1/2-inch patty. Cook for 4–5 minutes or until the burger is slightly browned. Flip and repeat, cooking for 4–5 minutes on the other side.
Meanwhile, in a small bowl, add the yogurt with the remaining 1/4 cup salsa. Mix well until thoroughly blended.
Serve burgers with the salsa sauce and lettuce, cheese or any other garnish you choose.

I have made these before and added shredded Monterey Jack with Jalapeno to mix for an extra kick.
