A healthy side dish full of protein and super yummy. Artichokes, lima beans and fresh dill make this dish surprisingly delicious!
In a pot on medium heat, add olive oil and scallions sauteing until scallion whites are translucent. Add lima beans and dill and saute for 2 more minutes. Add water, salt and pepper and bring to a boil. Add artichokes and cook for 4o minutes.
Serve with your favorite protein, fish or lamb, or enjoy on its own as a main meal.
