Description

A delicious vegan pumpkin spice granola that goes great on top of yogurt, smoothies, or chia seed puddings!

Ingredients

  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Ground Ginger
  • ¼ teaspoons Ground Nutmeg
  • ¼ teaspoons Ground Cloves
  • 2 cups Oats
  • 1 cup Rice Crisp Cereal
  • ½ cups Chopped Walnuts
  • ¼ cups Pumpkin Seeds
  • 2 Tablespoons Chia Seeds
  • 1 pinch Salt
  • ⅓ cups Coconut Oil
  • ⅓ cups Maple Syrup

Preparation

Preheat oven to 300ºF, and line a baking sheet with parchment paper.

Start by making pumpkin spice. Mix cinnamon, ginger, nutmeg, and cloves together is a small jar; set aside.

In a large bowl, mix oats, rice cereal, nuts, seeds, and salt together. Add the pumpkin spice mix and combine. Add coconut oil and maple syrup and stir everything until well combined.

Spread granola onto your baking sheet. Bake for 40 minutes, or until golden brown. Enjoy!
