Perfect as a dip, on sandwiches, tossed with pasta or spread on chicken and fish, this pesto is full of flavor and also vegan/gluten-free.
Into the bowl of a food processor add all ingredients except for olive oil. Turn processor to high and add olive oil through the feed chute in a slow steady stream. Start with 1/2 cup and add more olive oil until pesto reaches desired consistency.
Note: You can add 1-2 tablespoons more olive oil if needed to reach desired consistency.
