It’s so juicy and sweet, it’s almost like you’re committing a sin just by tasting it. It’s better than a piece of cake, and well, it’s better for you too.
If you don’t store your grapefruit in the fridge, throw ‘em in the freezer for a few minutes to let them chill.
Preheat oven/broiler. I set mine to broil at 550°F.
Slice the grapefruits in half (make sure their ugly spots are pointing out to the sides).
With a knife, cut around the inner circumference of each half. Then slice in between each segment. Our goal here is to make eating this as easy and quick as possible. Trust me, this goodness does not last long! Remove any obvious seeds—they are nasty to bite into. Blah!
Set grapefruit halves aside in an oven safe baking dish.
Combine Swerve sweetener (or sugar), cinnamon and butter in a small bowl. Mix well. Spread evenly onto the top of each grapefruit half.
Pop ‘em into the oven/broiler.
Broil for about 5 minutes or until the sugar has a nice crisp golden look to it. Remove from the oven and let them cool slightly. Dig in and enjoy!
Note: When oringally making this recipe I only used 1 grapefruit but felt there was enough topping to cover 2. I did not try it; if you feel you need more sugar topping, double each ingredient in the sugar mix.
