Peanut Butter cookies made with oat flour and Stevia. Simple, but delicious!
Preheat oven to 350F°.
Combine all ingredients in a bowl.
Drop by rounded tablespoons onto ungreased cookie sheet. Press down slightly with fork to create lines.
Bake for 8-10 minutes.

These sound wonderful! My diabetic husband wonders of I could make them with crunchy peanut butter… Gotta go bake some cookies now.

My dad, who is a diabetic, LOVES peanut butter cookies. I haven’t tried baking with stevia, yet; does it leave an aftertaste like when you use Splenda? Thanks!

Ooh, I never thought to make PB cookies with oat flour! How would you describe the texture of the cookies, are they a bit rougher than the ones made with regular flour? And can you taste the oats? I’m dying to try these now. And I love that it makes a nice, small batch.
