Protein thin mints. Low in sugar, gluten free—the best thin mint ever!
Place all ingredients into a bowl and stir together. Scoop onto a plate or tray, shape each scoop like a cookie, then set in the fridge to set. You want the cookies to be hard to the touch. Keep the thin mints in the refrigerator or store in the freezer. They are best chilled.
