A fun recipe that the kids can do with very little assistance. My 3-year-old granddaughter helps make these yummy Mocha pops. A nice frozen fat bomb for hot summer days, and less than one net carb each. Suitable for Atkins, keto, lchf, low carb, diabetic, low glycemic, gluten free, sugar free.
Put all ingredients in bullet blender and pulse a few times. Don’t go too long, or it will turn into mousse. Scrape the sides down with a small spatula, and pulse one more time.
Pour into popsicle molds. Freeze at least 3 hours.
Note: My mold set has 8 popsicle molds, each one about 2 ounces. This recipe makes 6 in my set. Nutritional info is for using my molds. If you use the larger molds that come 4 in a set (i.e. 3-ounce. molds), double all the nutritional information. I like having the small molds myself. It helps with portion control, and is much easier for small children to handle.
Nutritional estimates are per serving based on exact ingredients I used, calculated with a free online recipe analyzer. I do not include sugar alcohols or liquid sucralose in my nutrition counts, as they are not absorbed by the body and rate zero on the glycemic index. Calories 141, Total Fat 16 g, Total Carbohydrate 1.3 g, Dietary Fiber .5 g, Net Carbs 0.8 g, Sugars 0 g, Protein 0 g. Macros: 100% fat, 0% protein, 0% carbs.
