My version of a low carb favorite recipe. Easily modified to use any flavors you prefer. Suitable for gluten-free, Atkins, keto, lchf, low carb, diabetic, low glycemic.
Place jello powder in small mixing bowl and add boiling water. Stir until jello is completely dissolved. Refrigerate until thick and almost set. It will set fastest in a small rectangular dish rather than a bowl, about 20–25 minutes.
While jello is setting up, measure cream cheese and mascarpone into a large mixing bowl. Soften in the microwave for about 10 seconds, then let stand at room temperature while jello sets. (Mascarpone melts quickly, so don’t soften more than a few seconds in the microwave.)
Once jello is soft-set, remove from refrigerator and set aside.
Using a mixer, beat softened cream cheese and mascarpone together until creamy. Add flavored diet beverage and beat until well blended.
Add the almost-set jello a little at a time, and keep mixing until smooth. Set aside.
In a small mixing bowl, whip heavy cream with sweetener until soft peaks form. Gently fold the whipped cream into the jello mixture until well blended. (If you need to, use the mixer on lowest setting to get everything well blended.)
Transfer to serving dish(es). Chill until completely set. Serve with garnish of whipped cream, lemon zest, or lemon wedge, if desired.
Store covered in refrigerator. May be frozen after allowing to fully set in the refrigerator.
