Your favorite burrito fillings on a bed of brown rice. A healthy and quick weeknight meal.
Begin cooking the shrimp in a large pan on medium high heat. Remove them from the pan when they are cooked about halfway through, after about three minutes. Set them aside. They will finish cooking later.
Add onion, pepper, zucchini and corn into the pan. Cook until tender, about four minutes. Add cumin, red pepper, oregano and garlic powder. Once fragrant add diced tomatoes with liquid. Add salt and pepper to taste.
Throw the shrimp back in the pan to finish cooking for another few minutes. Once all the veggies are tender and the shrimp is cooked through, spoon the mixture over bowls of rice. Top with chopped cilantro and salsa. Enjoy!
