Roasted garlic embodies the savouriness, softness, silky smoothness, warmth and deep aromas that define comfort food.
Preheat oven to 400 F.
Remove the outer skin of the bulb of garlic and cut off a sliver of the top. Wrap the bulb with aluminum foil and bake for 20 minutes. Remove from oven and allow to cool a bit. When cool enough to touch, remove it from foil and squeeze the cloves out of the peel with your fingers.
