An easy raw recipe that everyone will enjoy. Gluten-free, vegan and raw with only a few ingredients. I hope you enjoy!
Slice zucchini into noodles using a mandoline. Place noodles in a bowl and set aside.
Blend the rest of the ingredients (except garnishes) with a high-powered blender.
I heat the zucchini in a skillet over low heat, just to warm it (my preference). Place it back in the bowl and toss in the sauce, using as much sauce as desired.
I add tomatoes and fresh basil before serving. There will be extra sauce you can refrigerate and use for salad dressing. Enjoy!
