A healthy, poppabale snack that tastes just like guiltless cookie dough.
In a food processor, add all ingredients except chocolate chips and pulse or mix until combined into a dough-like form (using your fingers, the dough should be workable if you roll into balls). Pour mixture into a large bowl and fold in chocolate chips.
Roll balls 1 to 1 1/2 tablespoons in size and place on a baking sheet lined with parchment paper. You should make about 12-16 balls. Chill in the fridge for 45 minutes or up to 2 hours.
Optional: After rolling the balls, you can roll them in shredded coconut, slivered almonds or pecan pieces for extra garnish and crunch.
