A great tabouli recipe with quinoa instead of the typical bulgur wheat.
Rinse quinoa.
In a small pot, add rinsed quinoa, 1/4 cup lemon juice, 1/4 teaspoon salt and water. Bring to a boil, then cover and simmer for 15 minutes. When finished remove from the pot and refrigerate until needed.
Meanwhile, dice the cucumber, tomato and red onion and chop the parsley.
When quinoa has cooled, add all ingredients to a bowl, drizzle with olive oil and remaining 1 tablespoon lemon juice. Salt and pepper to taste and toss together.
