Description

A great tabouli recipe with quinoa instead of the typical bulgur wheat.

Ingredients

  • ½ cups Quinoa
  • ¼ cups Fresh Lemon Juice Plus 1 Tablespoon, Divided
  • ¾ cups Water
  • ¼ teaspoons Salt
  • 1 whole Cucumber, Diced
  • 1 cup Tomato, Diced
  • ¼ cups Red Onion, Diced
  • 1 bunch Flat-leaf Parsley, Chopped
  • 2 Tablespoons Olive Oil

Preparation

Rinse quinoa.

In a small pot, add rinsed quinoa, 1/4 cup lemon juice, 1/4 teaspoon salt and water. Bring to a boil, then cover and simmer for 15 minutes. When finished remove from the pot and refrigerate until needed.

Meanwhile, dice the cucumber, tomato and red onion and chop the parsley.

When quinoa has cooled, add all ingredients to a bowl, drizzle with olive oil and remaining 1 tablespoon lemon juice. Salt and pepper to taste and toss together.

I made this for dinner this evening and my husband’s comment was “You should make this again.” I did add some chickpeas to make it a bit more substantial and served it on a bed of mixed greens. Very tasty!
