Description

This is a great low calorie recipe that really feels like you are eating something decadent and full of calories. It can also be easily adjusted to serve as many as you need.

Ingredients

  • 16 ounces, weight Chicken Breasts (approximately 4 Breasts)
  • 8 pieces Thinly Sliced Ham
  • 4 pieces Laughing Cow Cheese (from An 8-piece Round)
  • 1 cup Seasoned Breadcrumbs

Preparation

-Pour breadcrumbs into shallow dish.

-First, flatten each of your chicken breasts with a meat mallet. Top each chicken breast with 2 slices of ham and 1 wedge of Laughing Cow Cheese. Spread out the cheese slightly and fold edges of ham inward. Next fold each side of the chicken over the ham in a “burrito” like manner.

-Set the chicken into the pan of breadcrumbs and thoroughly coat while holding chicken sides closed over the ham and cheese.

-Once thouroughly coated, secure with a toothpick and place in baking dish.

– Bake at 400 degrees for 30 minutes.

I made this for dinner and it has quickly become my hubby’s favorite. The laughing cow cheese makes it super creamy as well. Easy! We also only make 2 chicken breasts.

Only 4 ingredients for such a delicious and easy main dish! I served it with sauteed spinach and a small salad. EASY EASY EASY! I’m sure my husband thought it took longer to prepare than it actually did. I also only prepared 2 chicken breasts.

i loved how easy this recipe was. It was delicious. I only cut the recipe in half because there is just 2 adults and I could only eat half! So plenty of left overs. Super delicious and healthy! Yum!
