Grapefruit with Roasted Almonds Black Rice and Green Peas
Boil rice in almond milk until soft, about 30 minutes. Boil split peas in water until soft, about 30–45 minutes.
Preheat a skillet and add maple syrup to the roasted almonds. Stir until caramelized.
For serving, use a big cookie cutter and add some rice. Press until firm. Add peas and press it into the cookie cutter as well.
Put sliced grapefruit around the rice and peas and sprinkle almonds on top.
