Description

These no-bake Salted Maple Pecan Pie Energy Balls are made with real, whole ingredients and in less than 10 minutes! Gluten-free, paleo, and vegan.

Ingredients

  • 1 cup Pitted Medjool Dates (about 13-15)
  • 1 cup Pecans
  • ½ cups Unsweetened Shredded Coconut, Plus 1/3 Cup For Rolling
  • 1 Tablespoon Maple Syrup
  • 1 teaspoon Sea Salt

Preparation

Place all of the dates, pecans, ½ cup shredded coconut, maple syrup, and salt in a food processor. Process for 1–2 minutes until mixture comes together.

Place remaining coconut in a bowl and set aside.

Roll mixture into 12 balls. Roll balls in reserved coconut and refrigerate 30 minutes before serving.
