Description

This simple, gluten free quick bread tastes like Banana-Toffee Pie!

Ingredients

  • 2 cups Gluten Free Flour
  • ¾ teaspoons Baking Soda
  • 1 teaspoon Xanthan Gum
  • ½ teaspoons Sea Salt
  • 4 whole Bananas, Peeled Then Mashed
  • ½ cups Creamy Peanut Butter
  • ½ cups Granulated Sugar
  • ½ cups Light Brown Sugar
  • ¼ cups Olive Oil
  • ⅓ cups Buttermilk
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract

Preparation

1. Preheat oven to 350 F and grease an 8X4 inch loaf pan. Line the pan with parchment paper so that it hangs over the sides.

2. Mix dry ingredients (flour through salt) together in a large bowl. Set aside.

3. In a large bowl, blend bananas, peanut butter and sugars with a hand mixer until well combined. Slowly add oil, buttermilk, eggs and vanilla.

4. Add dry ingredients into the wet and mix until batter is creamy and well combined. Pour into prepared pan and bake for 60 minutes or until a knife inserted in the center comes out clean. Serve with strong coffee on a bright summer morning.

Just made this recipe today and it is DELICIOUS! I subbed flaxmeal for the xanthan gum, since I didn’t have any and replaced 1/2 cup of the gluten free flour with coconut flour. It is so moist and tasty. So glad I found this recipe and will be making it over and over.
