This simple gluten-free stuffing is made with spicy-sweet Moroccan flavors! It’s a healthy twist on a classic side dish that’s perfect for Thanksgiving!
Preheat oven to 350ºF and grease a large casserole dish.
In a large frying pan, heat oil on medium/high heat. Add onion and cook until soft and golden brown, about 3–4 minutes.
Add apple, ginger and cinnamon, cumin, paprika and allspice and cook just until apple begins to soften, about 2 minutes. Add cooked apple mixture into a very large bowl. Add bread cubes, salt, cilantro, apricots and golden raisins. Toss until evenly mixed.
Add chicken broth and apple juice and gently mix (using your hands is the easiest) until bread has absorbed the moisture. Bake until the bread is cooked and the top is golden brown and slightly crispy, about 45–50 minutes.
Sprinkle with pistachios and devour!
Note: I cut each slice into 3 vertical slices then 2 horizontal, so each slice yielded 9 cubes.
