Description

Mini gluten free donuts packed with chocolate, peanut butter, and banana flavour, and topped with rich chocolate ganache.

Ingredients

  • FOR THE DONUTS:
  • 3 whole Very Ripe Bananas
  • 1 Tablespoon Peanut Butter
  • 2  Eggs
  • 1-½ teaspoon Vanilla
  • ½ cups Semisweet Chocolate Chips
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • 3 Tablespoons Coconut Flour
  • FOR THE GANACHE:
  • 1 Tablespoon Coconut Oil
  • ½ cups Semisweet Chocolate Chips
  • Sea Salt For Sprinkling

Preparation

For the donuts:
1. In the food processor, mix bananas and peanut butter together.
2. Add eggs and vanilla and mix to combine.
3. Next add chocolate chips and use the pulse option on the food processor for a few seconds.
4. Add baking powder and baking soda, and again pulse mixture for a few seconds.
5. Add coconut flour and mix to fully combine.
6. Cook the donuts according to mini donut maker instructions. We use a Baby Cake mini donut maker.
7. After removing cooked donuts from your mini donut maker, allow them to cool before dipping in ganache.

For the ganache:
1. Melt together coconut oil and chocolate chips over medium heat.
2. Once melted, dip the tops of the donuts in the ganache and then sprinkle with sea salt.
3. Place the donuts in the fridge for 10-15 minutes to let the ganache set.
