Description

Double chocolate chunk protein muffins are a quick and easy breakfast. They pack in the protein and look way more sinful than they really are!

Ingredients

  • 1 cup Gluten Free Bisquick Baking Mix
  • ½ cups Gluten Free Old Fashioned Oats
  • 1 package (3.9 Oz. Size) Dry Chocolate Pudding Mix
  • ⅓ cups Protein Powder (I Used Chocolate MyoFusion)
  • 1 Tablespoon Cocoa Powder
  • 2 teaspoons Baking Powder
  • ½ teaspoons Salt
  • 1-⅓ cup Milk
  • 2 whole Eggs, Beaten
  • ½ cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 350 F. Spray a 12-count standard size muffin tin with cooking spray and set aside.

Mix the baking mix, oats, pudding mix, protein powder, cocoa powder, baking powder, and salt in a large mixing bowl. Add the milk and eggs until the batter is well combined. Fold in the chocolate chips.

Scoop batter into the muffin tin (an ice cream scoop makes this easy) and bake for 20 minutes.
