This apple raisin easy gluten-free stuffing is made from a mixture of bread and cinnamon raisin bagels! It’s the perfect simple, healthy Thanksgiving side dish!
Preheat oven to 350ºF and grease a large casserole dish.
In a large frying pan, heat oil on medium/high heat. Add onion and cook until soft and golden brown, about 3–4 minutes. Add apples, ginger and cinnamon and cook just until apple begins to soften, about 2 minutes.
Transfer cooked apple mixture to a large casserole dish (mine was 9×13.) Add bagel and bread cubes and toss until evenly mixed. Add chicken broth, apple juice and salt and gently mix (using your hands is the easiest) until bread has absorbed the moisture.
Bake until bread is cooked and top is golden brown and slightly crispy, about 45–50 minutes. Devour.
