Description

A healthy, quick and easy, vegan, gluten-free treat that will surely satisfy your sweet tooth!

Ingredients

  • 14 whole Medjool Dates, Pitted
  • ½ cups Pistachios, Hulled
  • ½ cups Shredded Coconut, Sweetened
  • ¼ cups Cocoa Powder
  • ¼ teaspoons Salt (or More To Taste)
  • 1 teaspoon Vanilla Extract
  • Dark Chocolate (Mixed With A Touch Of Coconut Oil), Cocoa Powder, Or Shredded Coconut, For Coating

Preparation

Soak dates in warm water for about 10 minutes. Drain.

In food processor, combine pistachios, shredded coconut, cocoa powder, and salt. Pulse until finely ground. Add vanilla and softened dates, pulse until a ball forms.

Roll into bite-sized balls (mine were about ½ tablespoon in size) and dip immediately into cocoa powder, shredded coconut, or my personal favorite, dark chocolate melted with a touch of coconut oil.

Enjoy immediately! Store leftovers in an airtight container in the fridge.

Note: Cocoa powder is extremely bitter, so make sure you like the taste before rolling all of them in cocoa powder. My personal favorites are the shredded coconut or dark chocolate.

Excellent healthy treat to have on hand! I keep them in the freezer, and my children LOVE them too! I love them rolled in shredded coconut the best.
