Delicious, filling, cheesy, and so close to the real thing you won’t believe it. Made in about 30 minutes or less.
In a small bowl, add chickpea flour and 1/2 cup water. Whisk into a smooth paste. Add remaining 1/2 cup water and whisk until batter is runny. Add seasonings and whisk a final time.
Heat 1 tablespoon butter over medium heat in a cast iron skillet. When hot, add 1/2 cup of the chickpea batter. Once edges are brown and the top appears cooked through, cut chickpea pancake into 4 sections.
Place a slice of vegan cheese on one of the sections. Fold each section on top of one another (3 folds) until each section is layered on top of one another. Remove from the cast iron skillet and set aside. Add remaining butter and repeat with remaining chickpea batter.
Build your bagels with mayo, tomato slices, and red onion. Enjoy!
