Healthy and vegan broccoli soup, full of antioxidants, vitamins and minerals.
In a pan, saute onion and garlic until translucent.
In a pot, boil the water. Once water is boiling, add broccoli and lentils and cook for about 20 minutes until lentils are ready (soft). Once lentils and broccoli are ready, add onion and garlic in the same pot, along with coconut cream, salt and pepper.
Blend everything together until creamy in consistency. To serve, I recommend adding coriander leaves over the soup. Enjoy!
