Description

This savory soup is perfect for your leftover turkey!

Ingredients

  • 3 cups Cooked Wild Rice (one 6 Ounce Box Of Uncle Ben's Is Perfect)
  • ¼ cups Butter
  • 1-½ cup Finely Chopped Carrots
  • 2 stalks Celery Finely Chopped
  • 1 whole Medium Onion, Chopped
  • ½ cups Flour
  • 4 cups Chicken Broth
  • 2 cups Cubed Cooked Or Leftover Turkey
  • 2 cups Half-and-half
  • 1 teaspoon Dried Parsley
  • Salt And Pepper, to taste

Preparation

Cook wild rice according to package directions for 3 cups of cooked rice.

In a large pot over medium heat, melt butter, then add carrots, celery, and onion. Cook until veggies are tender, then stir in flour and cook for 2 minutes until the flour taste cooks out. Whisk in broth and bring to a boil. Stir and heat until nice and thick, about 10 minutes. Add remaining ingredients and reduce heat, simmering until serving time to allow flavors to meld.

This soup is delicious. I have even modified it to a vegetable rice soup when I don’t have shredded chicken/turkey on hand. Just sub in extra carrots and celery, and add corn and peas. It’s very filling and kids love it.

Just made this soup tonight. I have a ton of leftover turkey from Thanksgiving and sandwiches get boring. This recipe is WONDERFUL!! It’s creamy, velvety, savory and so full of flavor! Perfect way to use up leftover turkey. I made 2 changes: I didn’t have half and half on hand, but used 1 cup heavy cream instead. And similar to the other review, I added 1 tsp dried thyme, only I added it at the end of the recipe when I added the parsley. Worked very well. I will definitely make this again. Thank you so much for sharing!!

My family LOVES soup so I was anxious to try this one. I made this soup yesterday evening for dinner and can’t say enough about the wonderful flavor and texture. It was so creamy and delicious! Who doesn’t like half n half, right!? I only changed one thing by adding some finely minced fresh thyme to the saute of vegetables. I plan to add this one to my regular dinner menu!
