Description

Three-cheese tortellini and vegetables in a delicious turkey broth with Italian spices.

Ingredients

  • 2 teaspoons Olive Oil
  • 1 whole Onion, Diced
  • 1 whole Green Pepper, Diced
  • 1 clove Garlic, Crushed
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • ½ teaspoons Ground Pepper
  • 1 can (14.5 Oz. Can) Italian Style Diced Tomatoes
  • 6 cups Turkey Or Chicken Stock
  • 1 package (350g Package) 3-cheese Tortellini
  • 1 pinch Salt To Taste

Preparation

Heat oil in a Dutch oven or large soup pot over medium heat. Add onions, green pepper and garlic. Cook until tender, about 5 minutes. Add basil, oregano and pepper. Cook for 1 minute. Add tomatoes and stock. Heat on high until boiling, reduce to medium and add tortellini. Simmer uncovered for 10-15 minutes, until pasta is cooked. Add salt if desired.

Great flavor! Very tasty. This soup goes together super fast — only “prep” is dicing the onion. I will definitely make this again!

Side note: I did double the tortellini as it was part of a soup/sandwich dinner.

This is one of the best soups I’ve had in a while! I added shredded chicken breast to it and put in 2 big hand fulls of spinach after I turned off the heat. The basil and oregano gave this soup a fantastic flavor!
