A rich and hearty tomato soup filled with cheese tortellini, beef, and spinach. Easy to make and quick to cook, this soup is perfect for chilly weeknights!
Brown ground beef in a large pot with onion, salt, and pepper. Add tomatoes, broth, garlic powder, Italian seasoning, and sugar. Let simmer about 30 minutes.
Add tortellini and cook about 5 minutes more. Add spinach and cook 4–5 minutes, or until wilted.
Taste and adjust seasonings if needed. Serve and enjoy!
