Tomato and carrot soup is a low calorie, delicious soup that is healthy and full of vitamins. Tomatoes are a good source of vitamin A, B6, C and vitamin E. Red tomatoes are also rich in dietary fibers. Carrots are rich in vitamin A.
Season tomatoes and carrots with salt. Boil with water until tender. Let cool.
Transfer to a blender and blend completely. Add more water if needed to get the required consistency.
Return mixture to a sauce pan and boil for 10 minutes. Add sugar and black pepper to taste. Adjust salt to taste.
Garnish with chopped coriander (cilantro) leaves if desired. Serve piping hot with butter and croutons.
