Description

This is a Japanese interpretation of a western Beef Roast in Hot Pot form. It’s a fast meal that has depth of flavor that makes it seem like a meal that’s taken hours. It’s rich beef and tomato flavor goes great over rice, which soaks up all that gravy and gets it in your happy tummy.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 whole Medium Onion, Chopped
  • 2 cloves Garlic, Sliced
  • 3 whole Tomatoes, Quartered
  • 1 Tablespoon Butter
  • ¼ cups Soy Sauce
  • ¼ cups Red Wine
  • 1 Tablespoon Sugar
  • 4 whole Zucchini, 1/4-inch Rounds
  • 8 ounces, weight Mushrooms, Quartered
  • 1 pound Shaved Beef Roast (Chuck Sliced Sandwich Meat Thin)
  • 1 teaspoon Better Than Bullion Roasted Beef Base (Optional)
  • 1 Tablespoon Tomato Paste (optional)

Preparation

Heat a Dutch oven over medium-high. Add olive oil and stir fry onions, garlic, and tomatoes until soft and fragrant.

Add butter. Once melted, add the rest of the ingredients and reduce heat to medium low. Simmer for 15–20 minutes until, beef and veggies are done. Serve over rice and enjoy. If desired, add optional ingredients before serving. Taste for final seasoning.
