Description

This beef stew is easy to throw together, hearty and delicious! It’s a perfect fix-and-forget meal when you have a busy day.

Ingredients

  • 1 pound Stew Meat
  • 1  Large Onion, Quartered
  • 4  Russet Potatoes, Peeled And Quartered
  • 1 pound Frozen Carrots
  • Kosher Salt And Pepper To Taste
  • 3 Tablespoons Tapioca
  • 2 Tablespoons Sugar
  • 1 can (10 1/2 Oz. Size) Condensed Tomato Soup
  • 1 cup Water

Preparation

Preheat oven to 250ºF. Spray a Dutch oven with nonstick cooking spray.

Place the stew meat, onion, potatoes and carrots in Dutch oven, mix together. Add kosher salt and pepper to taste. Next, add the tapioca and sugar and combine until all mixed in with meat and veggies.

In a small bowl combine the soup and water until completely mixed. Pour soup over meat and veggies. Combine thoroughly. Cover and place in oven for 6 hours.

Serve over rice (optional).
