A can of simple refried beans transformed into a comforting, hearty soup.
Combine everything in a medium sized sauce pan and bring to a boil over medium heat, stirring frequently. Watch it – don’t let it scald. Once it’s slow boiling, reduce heat to low and cover the pan. Simmer for about 20 minutes.
Serve with hot tortillas, Monterey Jack (or your favorite) cheese, sour cream, and more cilantro.
