Description

Spicy rabbit stew is something different in my food repertoire. One of the biggest myths is that rabbit meat is dry. If you know how to cook it, it will never be dry. This recipe yields especially juicy and soft meat.

Ingredients

  • 250 grams Rabbit Meat
  • Salt And Pepper
  • 1 teaspoon Flour
  • 1 Tablespoon Olive Oil
  • 1  White Onion, Sliced Into Strips
  • 4 cloves Garlic, Pressed
  • 1  Red Chili, Sliced Lengthwise
  • 1 Tablespoon White Vinegar
  • 1 bunch Cherry Tomatoes, Halved
  • ¼ liters Vegetable Broth
  • 3 sprigs Basil, Chopped
  • 3 sprigs Rosemary, Leaves Stripped And Chopped

Preparation

Sprinkle rabbit meat with some salt, pepper and flour.

Heat a frying pan with oil in it and cook rabbit meat. Fry over high heat until meat has a soft golden color, remembering to frequently turn the pieces of meat. Remove from pan and set aside on a plate.

Pour out oil that is left in the frying pan. Add onion, garlic, and chili. Fry until onion softens. Transfer rabbit meat back to the pan and add vinegar. Cook for a few minutes. Add tomatoes and broth. Reduce heat and continue cooking for 20 minutes.

Add chopped basil and rosemary. Continue cooking until sauce thickens.

Serve with your favorite groats and decorate with some greens. Enjoy!
