Description

Smoky Pea Soup is rich, thick, salty, smoky and delicious.

Ingredients

  • 1 Tablespoon Vegetable Oil
  • 1 whole Onion, Chopped
  • 2 cloves Garlic, Minced
  • 1 cup Diced Carrot
  • 1 cup Diced Celery
  • 1 whole Bay Leaf
  • 6 cups Reduced Sodium Chicken Broth
  • 2 cups Dry Split Green Peas, Rinsed And Sorted
  • 1 whole Ham Hock
  • 1 teaspoon Salt,or To Taste
  • 1 teaspoon Pepper
  • ½ cups Water Or As Needed
  • 1 cup Chopped Cooked Ham

Preparation

In a large pot over medium heat, add the vegetable oil. When oil is hot add the chopped onion and saute 2 minutes. Add the garlic and saute 1 more minute. Add the carrot and celery and saute 2 minutes.

Add the bay leaf, chicken broth, split peas and ham hock and stir well. Increase heat to high and bring to a boil. Lightly place cover over the top of the pot and reduce heat to a simmer. Add salt and pepper to taste.

Simmer for 30-45 minutes, depending on the consistency you like. Add the water if needed. Remove ham hock from the soup. Chop any meat you want from the ham hock.

Remove bay leaf. Stir to mash peas into the soup. Add ham back into the soup, stir until heated and serve.

Notes:Taste before you add the salt. The ham hock and chicken broth add salt to the soup.
