Description

A simple yet delicious soup whose main ingredient is beans.

Ingredients

  • 2 Tablespoons Butter
  • 1 whole Small Onion, Diced
  • 2 cloves Garlic, Minced
  • 3 cans (15.8 Oz. Can) White Beans, Rinsed And Drained
  • 1 Tablespoon Fresh Basil
  • 1 Tablespoon Fresh Rosemary
  • 1 Tablespoon Fresh Thyme
  • 1 cup White Wine
  • 3 cups Veggie (or Chicken) Broth
  • ¼ cups Sherry
  • Salt And Pepper, to taste

Preparation

Melt the butter in a pan on medium heat. Add in the onion and garlic and let it cook up for 2 to 3 minutes.

Add in the beans and the fresh herbs. Next up, add in the wine and broth.

Allow the mixture a few minutes to heat back up and then turn the heat down a notch to medium low.

Smooth out the soup either with an emulsifier or in batches in your blender.

Stir in the sherry and add salt and pepper to taste.

Oh it looks so yummy…..I’ve had an emulsifier for years and only recently started using it. What a dummy! I love that thing now. Next to my food processor, it’s my favorite appliance.

Looks and sounds wonderfull. I have lots of canned beans and will surely try this soup. Any ideas for substituting the sherry?

YUM! We loved this. The herbs – especially the rosemary – take it over the top. I may add a little less broth next time to make it a bit thicker (just my preference). A new soup favorite for me! Thanks!

Excellent soup. I (surprisingly) did not have any canned beans. I instead used a pound of Navy beans I had sitting around. Took a bit longer but was so yummy! I followed the recipe with the exception of the fresh basil. I had to used dried because even in sunny Southern California, fresh basil is nowhere to be found. Thank you for the recipe, it is a keeper!
