Perfect for those soup and sandwich nights.
Heat an 8-quart Dutch oven or soup pot over medium high heat. Add butter and extra virgin olive oil. Add the onion and cook till soft, 5-10 minutes. Add garlic and cook till fragrant, 1-2 minutes. Add the remaining ingredients (except bay leaves) and mix well. Add bay leaves and bring to a boil. After a boil is reached, turn down heat to a simmer and cover pot. Simmer for 30 minutes. Remove bay leaves and serve.
