Description

A simple tomato basil soup recipe using canned diced tomatoes, onion, herbs and cream for easy and delicious comfort food.

Ingredients

  • ¼ cups Extra Virgin Olive Oil
  • 1 whole Small Onion, Finely Chopped
  • 3 cloves Garlic, Finely Chopped
  • ¼ teaspoons Dried Basil
  • ¼ teaspoons Dried Oregano
  • ¼ teaspoons Italian Seasonings
  • 1 cup Chicken Stock
  • 2 cans (14.5 Oz. Size) Diced Tomatoes With Garlic & Olive Oil
  • 1 teaspoon Red Wine Vinegar
  • ½ cups Heavy Cream
  • Salt And Pepper, to taste
  • Optional For Garnish: Chopped Fresh Basil, Cooked Crumbled Bacon, Shredded Parmesan

Preparation

Add the olive oil into a large saucepan on medium heat. Pour in the onion and allow it to sweat and soften a bit. Add salt and pepper. Cook stirring occasionally until the onions are translucent. Then add the garlic, basil, oregano, and Italian seasoning and mix thoroughly.

Pour in the chicken stock and tomatoes and stir to blend. Bring to a boil, lower the temperature and cover to simmer for 30 minutes.

Once the mixture is done simmering, add the vinegar and cream and puree in a blender or food processor until smooth. (It may take several purees to get desired smoothness, and make sure you don’t fill your blender totally full of the hot mixture. Just leave some space to allow for it to expand a bit.) Adjust salt and pepper as desired.

Top with fresh basil, bacon, and Parmesan.
