Description

When you’re craving that rich, salty, and spicy broth that warms your bones and cleans your sinuses, look no further. This paleo pho is everything you want without the takeout menu.

Ingredients

  • 1 Tablespoon Avocado Oil
  • 2 cloves Garlic, Smashed
  • 1 piece (1/4-inch Size) Fresh Ginger, Lightly Smashed
  • 1 whole Star Anise
  • 6 cups Turkey Bone Broth
  • 2  Medium Zucchini, Spiralized Or Julienned
  • 1 cup Turkey, Shredded
  • ½  Onion, Sliced Thin
  • 3 Tablespoons Coco Aminos
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • Green Onions, Basil, Sriracha, Jalapeno And Lime Wedges, For Serving (optional)

Preparation

Place a large pot over medium-high heat and pour in avocado oil. Once hot, add garlic, ginger, and star anise. Let this cook for a few minutes to release the flavors, stirring every so often so nothing burns. Add the turkey stock. Simmer while you prepare the other ingredients.

Set out deep soup bowls and divide zoodled zucchini into each bowl. Divide shredded turkey and top with onions slices.

Strain out the solids from the broth and add coco aminos. Pour broth into the bowls and let sit a few minutes so the broth can warm the zoodles and meat. Divide and sprinkle salt and pepper over the bowls

Serve with optional toppings.
