One of our all-time favorites!

Ingredients

  • 4 whole Medium Potatoes, Peeled And Cubed
  • 2 whole Medium Onions, Chopped
  • ½ cups Butter Or Margarine
  • ¾ cups All-purpose Flour
  • 2 quarts Milk
  • 3 cans (6-1/2 Oz. Size) Chopped Or Minced Clams, Drained
  • 1-½ teaspoon Salt
  • ½ teaspoons Sage
  • ½ teaspoons Celery Seed Or Celery Salt
  • ½ teaspoons Pepper
  • 1 teaspoon Ground Thyme
  • Minced Parsley, For Garnish

Preparation

Place potatoes in a saucepan and cover with water; bring to a boil. Cover and cook until tender.

Meanwhile, in a large pot, sauté onions in butter until tender. Add flour; mix until smooth, about 1 minute. Stir in milk.

Cook over medium heat, stirring constantly until thickened and bubbly. Drain potatoes; add to the onion mixture. Add clams and remaining ingredients; heat through.

Makes approximately 3 quarts.

Made this last night and thought it was very good. I only used one larger onion but added 1/2 green pepper minced and 2 stalks of celery. I also used 2 cups 1/2 and 1/2 and 5 cups Skim milk.

We made this today. It is really delicious, however we only added 6 cups of milk instead of 8 to make it a bit thicker. Thanks for a great recipe!

Very tasty I used 4 cups of milk and 4 cups of half and half so it would be a little thicker.
