Description

Nothing is as comforting on a cold winter day as a hot bowl of homemade soup. This soup is so easy and so delicious. If you have any leftover vegetables or noodles in your fridge you can add them too, I do!

Ingredients

  • 1 pound Ground Beef
  • 1 cup Chopped Onion
  • 1 cup Chopped Celery
  • 1 can (10oz) Consomme Soup Or Beef Broth
  • 1 can 28oz Crushed Tomatoes
  • 4 cups Water
  • 2 whole Carrots, Diced
  • 2 whole Potatoes, Diced
  • ⅓ cups Barley
  • 1 teaspoon Salt
  • ¼ teaspoons Pepper
  • ½ teaspoons Paprika
  • 2 teaspoons Dried Parsley Flakes

Preparation

In a large soup pot or Dutch oven over medium heat, brown ground beef. Drain grease if you want to, then add onions and celery and saute until tender. Add all remaining ingredients, cover and simmer for 1 1/2 -2 hours or until barley is tender. Ladle into bowls and serve.

My all-time favorite soup has always been hamburger soup. This is the best hamburger soup recipe I’ve ever had! Didn’t change a thing. Was a hit with my picky husband and my even pickier son. Hubby said it was even better the second day.

Wowee, this soup was delicious! Only changes I made were: I added a teaspoon of chopped garlic, diced tomatoes rather than crushed, and 1/2 cup of barley (because I love it!). My son came over with my three grandchildren and they gobbled it all up. Happy Day!
