Description

A soup that’s hearty and filling. Perfect for dinner, perfect for consuming in a fancy winter cabin.

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 cloves Garlic, Minced
  • 1  Small Yellow Onion, Minced
  • 4 cups Vegetable Broth
  • 28 ounces, weight Can Whole Plum Tomatoes
  • 1 cup Canned Cannellini Beans
  • 1 cup Millet
  • 2 stalks Celery, Sliced
  • 2  Medium Carrots, Sliced
  • 2  Bay Leaves
  • ½ teaspoons Kosher Salt
  • ¼ teaspoons Black Pepper
  • ½ cups Chopped Parsley Leaves

Preparation

Heat olive oil in a soup pot over medium-high heat. Add garlic and onions. Cook until onions have softened. Add remaining ingredients.

Bring soup to a boil; decrease temperature to medium. Let it simmer for 25 minutes or until the millet is completely cooked and soft.
