Description

As fast and easy as it sounds, you literally open cans and dump! But I promise you, it sure tastes like you worked harder than that!

Ingredients

  • ½ cups Diced Onion (or 2 Tablespoons Dried Minced Onion If You Need To Make This Really Fast!)
  • 1 Tablespoon Butter
  • 1 can (28 Oz. Size) Petite Diced Tomatoes
  • 1 can (15 Oz. Size) Corn, Drained
  • 2 cans (10 Oz. Size) Tomatoes And Green Chilies {mild}
  • 1 can (14 Oz. Size) Cut Green Beans, Drained
  • 1 can (15 Oz. Size) Black Beans, Rinsed And Drained
  • 1 envelope (about 1 Oz. Packet) Taco Seasoning {use Half It You Don't Like Your Soup A Little Spicy}
  • 1 envelope (about 1 Oz. Packet) Ranch Dressing Seasoning
  • 2 cans (5 Oz. Size) Chicken Chunks Or 2 Chicken Breasts, Boiled And Shredded
  • 2 cans (14.5 Oz. Size) Broth, 1 Chicken And 1 Beef
  • 1 can (Use The Broth Can To Measure) Water
  • 1 Tablespoon Steak Sauce
  • 1 dash Worcestershire Sauce
  • Sour Cream, Shredded Mozzarella Cheese And Tortilla Chips, For Garnish (optional)

Preparation

In a large soup pot, saute onion over medium heat in the butter; cook until softened. Dump all of the other ingredients (except garnishes) in the pot, draining and rinsing as directed. Simmer until ready to serve, about 30 minutes.

Tastes amazing with sour cream, mozzarella cheese and crushed chips!

I made this soup over the weekend. It was fabulously easy to put together and my family loved it. The broth is very tasty and got raves from the kids. I did have to make a few alterations based on what I had in the pantry. I used one can of Rotel and two cans of regular diced tomatoes. I only had a carton of chicken broth instead of cans so I used the whole thing and then finished with 10 oz. water. I took the suggestion and topped the soup with a dollop of sour cream plus shredded cheese. Eaten with your favorite tortilla style chips this is just awesome. Thanks for sharing the recipe.
