Description

This is a quick delicious comfort food for my family.

Ingredients

  • 3 Tablespoons Olive Oil, Divided
  • 1 whole White Onion, Diced
  • 1 whole Idaho (Russett) Potato, Diced
  • 2 whole Carrots, Diced
  • 2 stalks Celery, Diced
  • 3 cloves Garlic, Minced
  • 1-¼ cup Red Lentils Cleaned
  • 8 cups Chicken Or Vegetable Stock
  • 4 whole Sausage Links Of Your Choice Sliced
  • 1 teaspoon Each Of Salt, Pepper, Onion Powder, Garlic Powder And Steak Seasoning Or To Taste
  • 3 Tablespoons Balsamic Vinegar, Or More To Taste

Preparation

Heat 2 Tablespoons of oil in a large heavy pot over medium high heat until hot but not smoking. Saute onions, potatoes, carrots, celery and garlic for 5 to 8 minutes. Add lentils, stock, and seasonings and bring to a boil. Reduce heat to medium low and cook, covered until lentils are tender. It will take between 30 and 45 minutes.

While lentils are cooking heat remaining oil in a large skillet and add sliced sausage. Cook until browned. When soup is almost done add sausage and bring soup up to temperature. Pull off heat and add basalmic vinegar to taste.

Serve with a loaf of crusty bread and a nice green salad.

This looks like just the recipe for our family tonight. It sounds so warm and comforting. Pluse it has potato and sausage so my husband will eat it. Thanks for sharing
