Description

This super-fast and kid-friendly soup makes the most of your freezer and pantry staples. It’s perfect for a quick weeknight dinner.

Ingredients

  • 1 pound Lean Ground Beef Or Italian Sausage
  • 1 dash Salt, Pepper, Garlic Salt, And Onion Salt
  • 1 can Can Diced Tomatoes With Basil, Garlic, And Oregano (14 1/2 Ounces)
  • 4 cups Beef Broth
  • 1 teaspoon Dried Italian Seasoning
  • 2 cups Fresh, Frozen, Or Dried Cheese Tortellini
  • 1 dash Additional Salt And Pepper, To Taste

Preparation

1. Heat a pot over medium-high heat. Brown hamburger, seasoning with salt, pepper, garlic salt, and onion salt.

2. Add tomatoes, broth, and Italian seasoning. Bring to a boil and cook 5 minutes.

3. Lower heat to medium and add tortellini. Cook until tortellini are cooked through, about 7 minutes. Season to taste with salt and pepper.

we made this last night. it was super easy and so yummy! i’m sending it to my mother now!

I made this soup today and it was so quick, easy and yummy! I added some Merlot (just because I was drinking a glass while I cooked!) and I also love the idea of adding fresh baby spinach. I will have to do that next time, too! My kids even liked this (ages 2 and 5) even though they are not crazy about tomatoes.

Made this tonight, it was fantastic.
I even threw in some leftovers from the fridge I needed to use up; some chopped onions, fresh garlic (browned the with the beef), and about a half a bag of fresh spinach (always looking for ways to add more veggies to my family’s diet) It is yummy! Now I need to go find some crusty bread…
