Description

This flavorful stew will warm you right up on a cold day!

Ingredients

  • 16 ounces, weight Hot Italian Sausage In Casing, Cut Into 2-inch Pieces
  • Olive Oil, As Needed
  • 1 whole White Onion, Sliced
  • 1 whole Bell Pepper, Sliced
  • 1 can (22 Oz. Size) San Marzano Tomatoes
  • 2 dashes Worcestershire Sauce
  • Salt And Black Pepper To Taste
  • 1 teaspoon Ground Oregano
  • 1 teaspoon Ground Basil
  • ½ cups Low Sodium Vegetable Stock
  • Grated Parmesan Cheese, Garnish
  • Croutons Or Crackers, For Garnish (optional)

Preparation

In a large saute pan over medium heat, add sausage pieces and a drizzle or two of olive oil. Cook until no longer pink, about 7 minutes. Add onions and peppers and cook 3–4 minutes to soften. Transfer to a stock pot or Dutch oven (with a lid).

Add tomatoes, Worcestershire sauce, seasonings, and vegetable stock. Stir to combine. Cover with a lid and cook over medium heat for 15 minutes, stirring occasionally.

Ladle into serving bowls. Serve piping hot with garnishes of your choice. We love sliced bread with this stew to soak up the wonderful juices. Enjoy!
