Description

Absolutely delicious, cheap, easy, nutritious, multiplies and freezes well (I’ve made 8 batches at once)—what’s not to love? Don’t forget the brown sugar and vinegar at the end, which take this soup from good to great!

Ingredients

  • 1 pound Lean Ground Beef
  • ¼ cups Chopped Onions
  • 1 cup Chopped Celery
  • 1 cup Chopped Carrots
  • 1 cup Chopped Cabbage
  • 28 ounces, weight Crushed Tomatoes, Undrained
  • 28 ounces, fluid Water
  • ⅓ cups Uncooked Barley
  • 4 teaspoons Beef Bouillon Base (concentrate)
  • ½ teaspoons Basil
  • ½ teaspoons Thyme
  • Salt And Pepper, to taste
  • 1 Tablespoon Brown Sugar
  • 2 teaspoons Vinegar

Preparation

Note: onions, cabbage and carrots can be chopped in a food processor.

In a 5-qt saucepan or Dutch oven, brown beef until no longer pink. Add remaining ingredients except brown sugar and vinegar. Cover; bring to a boil, and immediately reduce heat. Simmer for 1 hour. Add brown sugar and vinegar. Check seasoning and serve.

I made a variation of this tonight for dinner, and it was excellent! My boyfriend ate a ton, and we have a lot of leftovers, too. Good work!

This was good and made a lot. I added chopped cilantro and topped it with grated Parmesan cheese.

Delicious! Warms you up on a cold winter’s day. It’s easy and I like to change up the veggies sometimes. Tonight I added some parsnip.

Great recipe! Reminds me of one my grandma used to make but the addition of the brown sugar and vinegar made it even better!
