Description

Not the classic long cooked gumbo…but I think it is just as good!

Ingredients

  • 3 whole Chicken Breasts, Skinned And Cooked In Water Or Broth And Cubed
  • 1 package Smoked Sausage, Sliced
  • 2 cups Chopped Onion
  • 1 cup Chopped Celery
  • 1 can Diced Tomatoes (14 1/2 Oz.)
  • 1 can Rotel Tomatoes And Green Chili Peppers (12 Oz.)
  • 1 pound Bag Frozen Okra (not Breaded)
  • 3 teaspoons Cajun Spice
  • Salt And Pepper, to taste

Preparation

Combine all ingredients and cook through.

Add 1-2 cups instant rice at the end of the cooking time. Cover and let rice cook until done….around 5 minutes.

This is a handed down recipe, so quantities are approximate; it tastes even better reheated.

Traci, I made this again yesterday. Soooo good! I had been home for the holidays and picked up some fresh hot sausage. It was fabulous. If I use the hot sausage again, I will lighten up on the cajun spice by a teaspoon, but my husband says not to change a thing. The two times I have made it, I shared with friends, and it is loved by everyone.

Made this last night and loved it! It’s maybe not a super traditional recipe for gumbo but delicious just the same. I used fresh okra because that’s what I had on hand and it was yummy. Really great warmed up for lunch the next day too. Thanks for sharing, Traci!

I made this tonight, and it was delicious! I have never used cajun spice and I was a little concerned about that, but my husband said it was perfect!! Thanks for sharing your handed down recipe.
