A fun and easy soup recipe that has been around forever. A great after school snack or lunch to warm the soul. Call it gourmet Spaghetti-O’s!
Cook pasta according to package instructions. When pasta is cooked, carefully drain off the water leaving an inch of water covering the pasta. Add the cans tomato paste and butter. Stir until butter is melted. Add spices (garlic powder, salt and pepper) and stir gently to combine.
Allow soup to sit in the pot on top of the burner (burner should be off) for 15 minutes (the pasta will absorb some of the water and thicken it slightly). Add Parmesan cheese and stir it in.
Serve with bread and butter and enjoy. Inspired by my grandma. I have been eating this for many years.
