Description

Hearty vegetable soup recipe from my mom, tweaked by me and loved by my family.

Ingredients

  • ¼ pounds Stew Beef
  • ½ cups Sliced Celery
  • 1 cup Frozen Corn
  • 1 cup Frozen Peas
  • 1 cup Frozen Green Beans
  • ¾ cups Sliced Carrots
  • ½ cups Lima Beans
  • 1 cup Tri Color Cole Slaw
  • 1 whole Potato, Diced
  • 1 whole Yellow Squash, Sliced Into Bite Sized Pieces
  • 1 can (14.5 Oz.) Tomato Sauce
  • 1 can 14.5 Oz Beef Broth
  • 1 can 14.5 Oz Diced Tomato
  • ¼ cups Joe's Suff Seasoning* Or Other Cajun Seasoning
  • Salt And Pepper, to taste

Preparation

Throw everything into a large crockpot. Add enough water to get to 1/2 inch from the top of the pot. Cook on low setting for 6-10 hours depending on how soon you want to eat it.

Note: Joe’s Stuff is from the New Orleans Cooking School. It gives the soup a little spice and punch. If you don’t have it, use your favorite Cajun seasoning.
