Description

A very easy, yummy, and healthy chicken tortilla soup that is ready is a very short amout of time.

Ingredients

  • 2 pounds Boneless, Skinless Chicken Breasts
  • 1 can Light Beer
  • 1 teaspoon Gound Cumin
  • 2 Tablespoons Minced Garlic
  • 1 whole Large Onion, Chopped
  • 6 cups Water
  • 6 blocks Chicken Bouillon Cubes
  • 1 jar Chunky Salsa (large)
  • 1 can Petite Diced Tomatoes (w/juice)
  • 1 teaspoon Chili Powder
  • 2 Tablespoons Lemon Juice
  • 1 bag Frozen Yellow Corn
  • Tortilla Chips
  • Sour Cream
  • Shredded Cheese

Preparation

Cook chicken ahead of time in cumin. (I like to put my chicken in the slow cooker all day long with the cumin, a little garlic powder, and a can of beer. It shreds nicely by just taking a fork through it. If you don’t use the slow cooker, omit the can of beer.)

Saute chopped onion in a little cooking spray or olive oil for 1-2 minutes. Add in chicken mixture and garlic. Stir till onion, garlic, and chicken are mixed together. Add in water and bouillon cubes till cubes have melted, and soup has come to a boil. Add in chili powder, lemon juice, salsa, diced tomatoes (with juice), and corn, and bring soup back to a boil. Simmer for 10-20 minutes.

Serve with crushed up tortilla chips. Sour cream and cheese are optional. It’s great with or without them. The leftovers are WONDERFUL!

The servings are very large. A bowl (with around 2 cups of soup) with the tortilla chips is only around 275 calories and it only has 5 grams of fat.

*Beer can be omitted from slow cooker and water can be used instead.
